  • 1 piece fresh ginger (the size of your pinky finger, roughly 7cm x 2cm (2in x 1in) or about 20g, a little less than 1 oz) – washed and peeled
  • 2 cups water
  • 1 Tbsp honey (or to taste)
  • 1-2 lemons or 2-3 limes (to taste)

Instructions

  1. Juice the lemons into a bowl. You should have 3-4 tbsp lemon juice.
  2. Slice the ginger finely, then crush it with the flat of a knife OR use finely grated ginger.
  3. Add the ginger to a small saucepan, then add the 2 cups of water and bring to a boil.
  4. Add honey and lemon juice. Return to a boil.
  5. Turn off the heat, cover, and let steep for at least 10 minutes or up to an hour in the boiling water.
  6. Strain and serve, or chill to make iced tea.

Making Your Own Version Of Ginger Tea

Combine ginger tea with soda water or seltzer for a refreshing iced tea (without the hassle of filtering tea leaves). It can be made even more delicious by including:
